You will need (not included):
- 2 eggs (or egg substitute)
- 1/3 cup melted coconut oil (or oil of choice)
- 3/4 cups coconut/almond mile (or milk of choice)
- Preheat oven to 180 degrees C and grease muffin or line 18cm cake tin.
- Lightly whisk eggs and add wet ingredients.
- Add wet ingredients to dry ingredients.
- Stire to combine.
- Spoon into prepared tin.
- Bake muffins for 10-15 mins.
- Bake cake for 20-30 mins.
